The person behind the Green Marlin is Owner and Chef Lou Kolbauer, who is also known for the Chive Restaurant on Royal Palm Pointe. We first assumed from the name that the restaurant was primarily a seafood restaurant, however, we were pleasantly surprised many other choices from Pork Ribeye, to Stir Fry, Burgers, Reubens, Melts, and Tacos. chicken and baskets.
